The iPhone software has to handle that.
On my iPhone 12, the paper size does not show up if I forget to wake up or turn the printer on first.
If the wrong size or no size shows up then close the iPhone application and wait till the printer figures out what paper is available. I have to go to my printer and select the paper size and the source tray for the iPhone. On my PC the printer app can tell the printer what to use.
